If you want some serious, indepth texts, try Fundamentals of Speech Recognition or if you seek a more recent text, look at Theory and Applications of Digital Speech Processing. Rabiner is the co-author of both books and is one of the leading experts in the field.
Now if you are after more of the computational aspects, the next text has a surfeit of Matlab code for you to try out on your own, Applied Speech and Audio Processing: With Matlab Examples. But if it is commercial applications, this text might be more suitable, Advances in Speech Recognition: Mobile Environments, Call Centers and Clinics. All of these provide substantial material for the reader.
What you must avoid is this supposed book by Kevin Roebuck. It is a collection of Wikipedia articles that he pulled down and hardcopied into the book. Cynically note that the webpage says nothing about this. But the reality is Wikipedia. Which you can read for free, and do so immediately, instead of paying for and then waiting for the book.
And even if you like Wikipedia articles, they have a drawback. They are a synopsis of original works. No article goes very deep into its subject. Especially this subject, for which there are ample texts spanning 30 years.
